Seriously, ridiculously, good, loads better than the plastic swathed ones, and its much healthier!!

  1. *Base
  2. 1 1/2 Cup Roast almonds
  3. 1 1/4 Cup Soft medjool dates
  4. 1/4 tsp Good salt
  5. *Caramel
  6. 1 1/4 Medjool dates
  7. 1 Cup Raw cashews
  8. *Peanut layer
  9. 3/4 Cup of roasted unsalted peanuts
  10. *Chocolate toppping
  11. 1/2 Cup melted Coconut oil
  12. 1 Tbsp Maple or rice malt syrup
  13. 2 Tbsp Cacao powder
  14. pinch of salt
  1. For the Base
  2. Pulse together in food processor until blended but still a little chunky.
  3. Press the mixture in a tin (20cm x 20cm) lined with baking paper, place in the freezer.
  4. For the Caramel layer
  5. Blend together until mixture is well blended & forms a ball
  6. Press into the tin on top of the base mixture.
  7. Sprinkle the peanuts over the caramel & place back in the freezer.
  8. For the Chocolate topping
  9. Blend for about 2mins until nicely mixed. Pour quickly over the rest of the slice in the tin & place back in the freezer.
  10. Chop into nibble size portions when set.
  1. Will keep up to one month in the freezer or 2 weeks in the fridge, highly unlikely you will have any left after a few days though!
