Xmas Coconut Snow Gems
So I’m meant to be doing a zillion other things (namely making dinner), but I was inspired all of a sudden & these just had to be made! I not sorry either & I’m pretty excited to share these tasty little morsels with you. My first try with them & they were a success.
They are a take on the marshmallow ones you see around this time of year, except they are packed full of coconut, chocolatey goodies with no crappy refined sugar & actual real ingredients. The biggest bonus of course are all of the ingredients are easily purchased from your local bulk store or in glass (coconut oil). You may however be a lucky ducky like me & your store sells it in a giant tub ready to be scooped into you own jar…….. Manly Food Coop stocks it in bulk for the northern beaches kids.
2 Cups Shredded coconut
1 1/2 Tbsp melted Coconut Oil
2 Tbsp Maple syrup
2 Tbsp Coconut Cream
Pinch of good salt
1/2 Cup melted Coconut Oil
1 Tbsp Maple syrup
2 Tbsp Raw Cacao powder
Extra coconut to top
In the food processor blend 1 cup of the shredded coconut with the oil, maple syrup, coconut cream & salt. Blend until smooth & place in a mixing bowl
Add the remaining cup of shredded coconut & stir through.
Shape into 14 little balls & place in the freezer for an hour. This will make it loads easier to dip in the chocolate mixture.
When they are firm, blend the remaining coconut oil, maple syrup & cacao until smooth. Bowl into a small bowl so its sits about an inch thick. You want it to be easy to coat the balls.
Dip each ball in with a spoon & coat thickly. Place on a plate with grease proof paper & top immediately with the coconut. The chocolate will harden fairly quickly.
When they are all nicely coated pop them in the freezer to set.
So thats it, pretty simple, plastic free & tasty & I have to admit my dinner never got made as my belly was full of them…..I had to quality test them you understand!!
These are best served from the fridge.
